Chocolate Mousse

I love Friday night treats, last night it was Chocolate Mousse.
How can something with only 4 ingredients be SO delicious?

6oz chocolate chips
3/4 cup heavy whip cream
3 egg whites
2 tablespoon sugar
2 tablespoon strong brewed coffee (oops, I guess it’s 5 ingredients)

Melt the chocolate over a double boiler until silky smooth, then add in the brewed coffee. You will need to whisk the chocolate until smooth again.
Let cool to room temperature.

Whip the heavy cream adding the sugar until firm whipped cream consistency.
Hold in the refrigerator to keep cool.
Next, whip up the egg whites until stiff peaks form.
Gently fold together the egg whites and whip cream, do not aggressively combine.
Once the chocolate has cooled, incorporate the chocolate to the egg and cream mixure…again do this very gently to just combine, not whip together. You want to keep a firm consistency here…it doesn’t have to be perfectly mixed together.
A little marbling is great.

Portion out the mousse into individual dishes and refrigerate until ready to serve.
This makes about 4 portions.

    • I thought about pinning it, but I don’t think it photographs very well…chocolate mousse isn’t so appealing unless you are about to take a bite, if you know what I mean. 🙂
